Ricky Delos Santos, better known as Chef Ricky, started his career working as a server at Hakata Japanese Restaurant in Jacksonville, North Carolina. During his time of serving there, he was amazed how the chefs cooked in front of the guests. One day, the owner, chef Hamasan Hamamoto gave Ricky the opportunity to become a chef and he trained him for 3 months before he officially became a teppanyaki chef. In 1999, Chef Ricky moved to Raleigh and began his career at Kanki at our flagship Crabtree Valley Mall location. Chef Ricky’s passion for cooking and hard work earned him many promotions over the years and eventually led to him becoming the Chief Chef at our North Market Square location.
