Alex Cordova, better known as Chef Alex, learned the art of teppanyaki cooking in 1997 by the hand of Master Chef Hiroshi Sekita – one of the regional chefs of Benihana. Over the years he has worked his way across the United States as the Chief Teppanyaki Chef at some of the Benihana restaurants in Virginia, Pennsylvania, and the Northern California Bay area. At the same time, Chef Alex had the privilege to work with some of the best master teppanyaki chefs such as Katsutoshi Aono, Tetso Inoue, and Toshiya Nemoto (current Executive Chef of Benihana). Chef Alex became the Kanki Corporate Executive Chef in 2011.
