Alex Cordova, better known as Chef Alex, learned the art of teppanyaki cooking in 1997 by the hand of Master Chef Hiroshi Sekita – one of the regional chefs of Benihana Inc. Over the years he has worked his way across the United States as a Chief-Teppanyaki chef of some of the Benihana chain restaurants in the Northern California Bay area, and in the Virginia and Pennsylvania area. At the same time, Chef Cordova had the privilege to work with some of the best master teppanyaki chefs like Katsutoshi Aono, Tetso Inoue, and Toshiya Nemoto – who is now the Executive Chef of Benihana Incorporated. Alex Cordova became the Kanki Corporate Executive Chef in 2011.

Chef Cordova works closely with Chef Albert, Chef Cuong, and Chef Huong, Kanki Chief Chefs for Crabtree, Durham and North Market Square locations and also with all Kanki culinary staffs, and our long-term culinary team of sushi chefs, in developing new menu initiatives and refining cooking procedures to help bring the latest in Japanese culinary trends to Kanki.” - Gee Dararouksa, Director of Operations.

The Kanki Food Excellence Program, initiated in October 2011, includes maintaining the quality of food and beverages, raising the level of service standards, and revitalizing the concept’s marketing and public relations. These combined efforts are focused on increasing guest frequency, creating greater mindshare, and ultimately bolstering restaurant sales at the company’s flagship brand.
