CHEF ALBERT LAMBERT

CHIEF CHEF - KANKI CRABTREE VALLEY MALL

Lambert, better known as Chef Albert, has been with Kanki for more than 21 years. He landed in Raleigh after making a stop here from his home town of Orlando, on his way to visit a friend in New York. He began his career in 1985 as a cook in the Arigato Japanese Steak House, then the Samurai Steakhouse in Florida. In 1986, Chef Albert started his Teppanyaki training with Master Teppanyaki Chef Hal Ueda where he most recently served as Benihana’s regional chef – North East & Florida region.

Chef Albert worked with Benihana from 1989 – 1991. In 1991, he came to Kanki as a Teppanyaki chef. In 1995 he was promoted to Chief Chef at Kanki’s North Market Square location. He was later promoted to Chief Chef at the flagship Crabtree Valley Mall location, where he remains today.

His philosophy is “cook food the way you want to eat it – don’t cook something that you wouldn’t eat yourself.”

When Albert isn’t cooking at Kanki, he enjoys playing golf and visiting the Philippines.
